"But in barely a generation, the wine culture of the United States has been transformed. Bottles from all over the world are now sought, studied and cherished by wine lovers who take courses, read books, subscribe to periodicals and debate on the Internet.
Nowadays, a wide and varied wine list is crucial not only to a restaurant's image but to its financial success, accounting for a full 30 percent of a restaurant's net revenue. That makes it all the more important for a restaurant to find the right wine staff".
